As for your question on jews/the Jews, I would say it depends on the context for "Jews" (generally okay unless followed or preceded by something else derogatory lol), but "the Jews" probably better to avoid (lots of loaded history on that one with conspiracy theories, it's too often followed by something about banking goblins or George Soros lmao). But I think whenever you're in doubt, "Jewish people" is a great, usually pretty benign alternative!
