AIPAC is disgusting. Every nefarious interest group, country, organization, etc has lobbying groups dedicated to nefarious agendas. I don't think that one group's PR efforts are necessarily crucial or any more germane to the conversation than the simple dictate "It is not antisemitic to criticize the government of Israel." Anyone would be foolish these days to think that any major entity doesn't majorly spin their messaging. Yes, there are very evil AIPAC PR playbooks, but it shouldn't be received any differently than any New York Times article or wistful speech from President Biden about how people in Afghanistan might suffer when/if American troops leave.

Ultimately I completely agree with you, criticism of Israel's government must not be silenced or conflated with antisemitism, but I think the way to do that is less to focus on specific organizations (although I do think it's important, especially for Jewish people to be wary of AIPAC and similar orgs--we protested against AIPAC when I was involved in IfNotNow) and more to focus on understanding more nuanced perspective of the conflict, gaining personal and collective insight on trauma, and learning more about the history of the peoples and the region.
